RESUMO

The inclusion of by-product coconut mesocarp skins (CMS) in diets was evaluated in feedlot lambs. The objective of this study was to evaluate CMS levels effects on carcass traits and meat quality of lambs. Thirty-five male lambs with an initial body weight of 16.9 ± 2.93 kg were distributed in a completely randomized design with five CMS levels in total dry matter (0; 4.8; 9.6; 14.4 and 19.2%) and fed during 71 d until slaughter. High levels of CMS decreased the intake of dry matter and negatively affected the performance of lambs. Fat and protein contents of Longissimus lumborum muscle (P < 0.05) and the saturated fatty acid (FA) decreased (P < 0.001) whereas polyunsaturated FA increased (P < 0.01) with the inclusion of CMS. The ratio t10/t11-18:1 increased with the inclusion of CMS (P < 0.001). The instrumental color descriptors were unaffected by CMS levels. According to the effects on the investigated meat quality traits we recommend up to 4.8% CMS in diets of confined lambs.

The Amazon has a wide variety of oilseeds that generate a huge amount of co-products with potential for use in animal nutrition. The objective was to use alternative resources (oilseed cakes) in the feeding of lambs to assign a sustainable destination to this biomass, and evaluate its influence on the quality and fatty acid (FA) profile of the meat. Twenty-four lambs, male, castrated, crossbred Dorper × Santa Inês, weighing 30 ± 1.3 kg of initial body weight, were distributed in a completely randomized design in 4 treatments (diets) with six replications (animals). The control diet (Control) contained corn and soybean meal as main ingredients, which were partially replaced in the other diets by cupuassu cake diet (Cup), palm kernel cake diet (Palm) and tucuma cake diet (Tuc). The inclusion of Amazon cakes influences the lipid (P = 0.02) and protein (P < 0.01) composition of meat (longissimus lumborum); reduces cooking losses (P < 0.01); influences the colors (L, a, b), chroma, and Hue Angle (P < 0.01); promotes changes in total FA composition and FA profile (P < 0.05); reduces hypocholesterolemic FA (h) (P = 0.01), but does not influence hypercholesterolemic (H) and indices h:H, AI and TI (P > 0.05). The inclusion of oilseed cakes influences the chemical composition, physical parameters, composition and fatty acid profile of the meat, but does not influence the indicators of atherogenicity, thrombogenicity and cholesterolemia.

This study aimed to evaluate the yield, physical-chemical properties, fatty acid (FA) profile, and sensory traits of goat milk under different nutritional strategies in a Brazilian semiarid environment. Eighteen lactating crossbred dairy goats were distributed in a completely randomized design with three nutritional strategies: Caatinga strategy (1.5% of body weight with a concentrate supplementation), Corn-based confined strategy, and Spineless Cactus confined strategy. Daily milk yield was recorded, and milk samples were collected from all animals. Goats fed the spineless cactus-based diet presented a higher milk yield than goats feed the other strategies. Moreover, milk from goats fed with a spineless Cactus confined strategy presented higher saturated FA (SFA), and a lower proportion of cis- monounsaturated FA, trans-monounsaturated FA, and c9,t11-18:2 than milk from goats feed the other strategies. Milk from goats in the pasture system presented the highest proportions of 18:2n-6, 18:3n-3, and thus of polyunsaturated FA, when compared with milk from confined goats. We assume that milk from goats grazing in Caatinga pastures presents more benefits to human health due to the positive effects of this diet on the milk's fat content and FA profile, and this feeding strategy also results in a better sensory evaluation that may increase the acceptability of goat milk by consumers. All nutritional strategies evaluated herein and adopted in the semiarid region of Brazil are recommended for maintaining the yield, physical-chemical properties, and acceptability of milk goats.

Our current understanding of the effect of medium-chain FA (MCFA) rich vegetable oils on ruminant nutrition is limited. We assessed the effects of babassu or buriti oil addition to the diet of lambs on intake, nutrient digestibility, FA profile of abomasal digesta content and biohydrogenation (BH) patterns in digestion. The experimental diets were defined by the addition of babassu oil or buriti oil to the diet, as follows: (1) non-supplemented diet (CON); (2) 40 g/kg of babassu oil (BAO, rich in C12:0); and (3) 40 g/kg of buriti oil (BUO, rich in c9 18:1), on a dry matter (DM) basis. During the last five days of the feedlot, samples of orts and feces were individually collected to determine the nutrient and FA digestibility. At the end of the experiment, animals were slaughtered, and the abomasal digesta was collected, freeze-dried and used for FA determinations conducted by gas chromatography. The BAO diet decreased the DM (p = 0.014) and nutrient intake. The lambs fed BUO had the greatest FA intake, followed by the BAO and CON diets. However, BAO increased total FA digestibility, compared with CON, but did not differ from BUO. The BAO diet extensively changed the FA composition of abomasal digesta when compared with both the CON and BUO diets. The BAO diet also increased C12:0 and C14:0, the sum of PUFA and the BH intermediates FA, including the t-10-18:1 but decreased the C18:0 in abomasal digesta. The BUO addition had the greatest total-FA and C18:0 and the lowest biohydrogenation intermediate content in abomasal digesta. The BH was less complete with the BAO diet and a large increase in t10-18:1 and of t10-/t11-18:1 ratio was observed, which indicates the occurrence of t10 possibly shifted rumen BH pathways, probably as a response to bacterial membrane stress induced by the greater C12:0 concentration in the rumen.

This study aimed to evaluate the productive performance and carcass characteristics of lambs fed diets with different types of carbohydrates associated with polyunsaturated fatty acids. Thirty castrated male lambs (20.5 ± 7.6 kg) were used, distributed in a randomized block design under three experimental diets: High proportion of non-fibrous carbohydrates (NFC) diet; High NFC diet + spineless cactus (high proportion of NFC and spineless cactus) and Low NFC diet (low proportion of NFC), in a 60 day experimental period. The variables of nutrient intake, performance, and carcass characteristics were evaluated. The animals fed the High NFC + spineless cactus diet presented a higher dry matter intake, organic matter, mineral matter, crude protein, and total carbohydrates intake (p <0.05). Carcass characteristics and weight of commercial cuts were improved in High NFC and High NFC + spineless cactus diets (p <0.05), on the other hand we observed a total fat weight reduction in animals fed with High NFC + spineless cactus. The results indicate that high levels of NFC positively influence animal performance, where the type of carbohydrate influences nutrient intake, also affecting carcass characteristics.(AU)

This study tested the hypothesis that naturally and industrially produced trans-fatty acids can exert distinct effects on metabolic parameters and on gut microbiota of rats. Wistar rats were randomized into three groups according to the diet: CONT-control, with 5% soybean oil and normal amount of fat; HVF-20% of hydrogenated vegetable fat (industrial); and RUM-20% of ruminant fat (natural). After 53 days of treatment, serum biochemical markers, fatty acid composition of liver, heart and adipose tissue, histology and hepatic oxidative parameters, as well as gut microbiota composition were evaluated. HVF diet intake reduced triglycerides (≈ 39.39%) and VLDL levels (≈ 39.49%). Trans-fatty acids levels in all tissue were higher in HVF group. However, RUM diet intake elevated amounts of anti-inflammatory cytokine IL-10 (≈ 14.7%) compared to CONT, but not to HVF. Furthermore, RUM intake led to higher concentrations of stearic acid and conjugated linoleic acid in all tissue; this particular diet was associated with a hepatoprotective effect. The microbial gut communities were significantly different among the groups. Our results show that ruminant fat reversed the hepatic steatosis normally caused by high fat diets, which may be related to the remodelling of the gut microbiota and its anti-inflammatory potential.

In this research communication we describe the composition of fatty acids (FA) present in the milk of the Nordestina donkey breed, and how they differ during lactation. Milk samples were taken from 24 multiparous lactating Nordestina donkeys that grazed the Caatinga, comprising 5 animals at each of around 30, 60 and 90 d in milk (DIM) and a further 9 animals ranging from 120 to 180 DIM. The milk fat content was analysed by mid infrared spectroscopy and the FA profile by gas chromatography. The milk fat percentage ranged from 0.45 to 0.61%. The main FA found in milk were 16:0 and 18:1c9. These did not differ among DIM classes and comprised 23% and 25% of total FA. Notably, the α-Linolenic acid (18:3 n-3) was the third most abundant FA and differed (P < 0.05) with DIM, being lowest in the 30 and 60 DIM samples (around 10.7% of total FA) and highest in the 60 and 90 DIM classes (around 14.6% of total FA). The low-fat content and the FA profile of the donkey milk gives it potential as a functional ingredient, which could help to preserve the commercial viability of the Nordestina donkey breed.

Our study evaluates the impacts of maternal consumption of different levels of CLA during pregnancy and lactation on physical and metabolic changes in the rat progeny. Three groups were formed: control (CG) - diet without CLA; CLA1 - diet containing 1% CLA; and CLA3 - diet containing 3% CLA. Murinometry, body fat collection, biochemical analysis, glycemic curves, liver fat amount, and fatty acid profiles of the liver were studied. The data were analyzed by ANOVA, followed by the Tukey test (p < 0.05). The CLA3 group presented highest body weight, feed intake and BMI (p < 0.05). The retroperitoneal fat, epididymal fat, and body fat index were higher in the CLA1 and CLA3 groups (p < 0.05) but no difference was observed for mesenteric fat. Yet in contrast, the experimental groups presented lower abdominal circumference and glycemic curves when compared to the CG (p < 0.05). CLA1 and CLA3 groups presented higher values of total cholesterol and HDL-cholesterol (p < 0.05), yet no difference was found in serum triglycerides or LDL. The CLA3 group presented less n-3, n-6, total PUFA, and arachidonic acid in liver fat (p < 0.05). The CLA1 and CLA3 groups were higher in total MUFA in the liver fat. In conclusion, CLA when consumed during gestation and lactation increased: tolerance to glucose, HDL, and the body fat index in the offspring. Only the CLA3 group presented reduced total PUFA, n-3, n-6 and arachidonic acid in the offspring's liver.

The effects of adding babassu oil (BAO) or buriti oil (BUO) to lamb diets, on performance, carcass characteristics, meat quality and fatty acid (FA) composition were evaluated. Feeding BAO reduced (P = .02) dry matter intake, kidney fat and dressing percentage, but did not change energy intake and performance. Meat pH, color, protein content and sensorial evaluation were not affected by diet. However, BUO increased (P = .02) intramuscular and subcutaneous fat contents, but decreased shear force. BAO increased (P < .05) trans-monounsaturated FA, total biohydrogenation intermediates (BHI) and the t10:t11 ratio, in meat and subcutaneous fat, but decreased total FA and cis-monounsaturated FA, did not change SFA, and increased (P = .04) PUFA in meat. BUO supplementation promoted the highest (P < .05) SFA and total FA content in subcutaneous fat but did not change PUFA. BAO can be used as an alternative energy source for growing lambs, but does not improve the meat FA composition.

Goat fat is one of the best sources of conjugated linoleic acid (CLA), a fatty acid which has health benefits. However, though CLA is generated in ruminants, CLA consumption is limited to meats and milk products. This study aimed to replace vegetable fat with goat milk fat enriched with CLA. From differing fat sources, four cookie recipes were developed: CVF-vegetable fat cookies; CB-butter cookies; CG-goat milk fat cookies without CLA; CGCLA-goat milk fat cookies with CLA. The cookies were evaluated using physical (color and texture), physical-chemical parameters (lipids, proteins, total sugars, fiber, ash, moisture and Aw), consumer testing (n = 123), and lipid profiles. The CGCLA presented higher values in the color parameters. The highest and the lowest scores obtained for hardness were respectively 5.54 (CB) and 2.21 (CVF). Lipids and total sugars varied inversely; the highest percentages of lipids were in the CVF and CG samples which obtained lower total sugar content. There were no differences in acceptance or preference for the four formulations. The goat cream formulations (CG and CGCLA) were as well accepted as the CFV formulation. For lipid profiles, CFV presented the highest percentage of trans-fatty acids (TFA) at 16.76%. CGCLA presented 70% more CLA than either CB or CG, certifying that CGCLA presents CLA in relevant quantities, even after cooking. The CGCLA presented higher levels of CLA, and in this study it was verified that goat milk cream enriched with CLA can be used in producing cookies, adding functional and nutritional properties, and offering another alternative(s) to produce food from goat milk fat.
