RESUMO

This study aimed to carry out somatic cell count (SCC) in milk produced and marketed in Santa Luz and Redenção do Gurguéia in order to obtain information on the quality of the product. Milk samples (n=41) were bought in bottles of sterile glasses and these were taken into isothermal box with ice to the Food Microbiology Laboratory of UFPI Campus of Bom Jesus. In the laboratory 40 ml were removed and placed in milk bottles containing Bronopol. The samples were brought to the laboratory PROGENE, UFRPE, where the CCS is performed by flow cytometry. The CCS ranged from 1 x 103 to 5.9 x 106, averaging 5.05 x 105 cels. / Ml of milk. The results indicate poor quality of milk and high occurrence of mastitis in the herd. Actions should be instituted to improve the conditions of production and dairy trade.

RESUMO

Meat is a great medium for the growth of microorganisms and may be responsible for transmission of pathogenic bacteria to man. Among its products, ground beef has highlighted to be a low-cost product and easy to prepare, however, that food is a great culture medium due to factors that favor the multiplication of microorganisms that can cause infections. This study evaluated the sanitary conditions of ground beef sold in Bom Jesus, PI, by counting of mesophilic aerobic bacteria. It was concluded that the released ground beef in Bom Jesus-PI, is produced under unsatisfactory higienic conditions and their consumption may pose a risk to consumer health.

RESUMO

The quality of ground beef results of sanitary conditions in the entire production chain, and preventive care should include transport, storage, handling, exposure and preparation of meat. This study evaluated the hygienic conditions of bovine ground beef sold in Bom Jesus-IP, through the molds and yeasts count. Were bought 30 samples of ground beef cattle in different establishments of the Bom Jesus-PI. Samples were taken to the Food Microbiology Laboratory - Campus of Bom Jesus (UFPI). Aliquots were inoculated in potato dextrose agar for incubation at 28° C / seven days. Grew molds in 14 samples, with scores ranging from 2.0 x 101 to 2.5 x 105 CFU /g. We conclude that the hygienic conditions of obtaining meat are precarious and steps should be taken to improve the slaughter and product quality.

RESUMO

Enterobacteriaceae can be present in the environment and in the intestine of warmblooded animals. This study aimed to isolate and identify enterobacteria in informally marketed milk in cities of South of the Piaui. 52 milk samples were acquired at different points of Bom Jesus, Redenção do Gurguéia, Santa Luz and Cristino Castro, Piaui, which were taken into Styrofoam containing ice to food microbiology laboratory of the Federal University of Piauí, in Bom Jesus, where held the bacterial isolation in MacConkey, EMB and XLD. The conclusive biochemical identification and agglutination test was held at the Enterobacteria Laboratory of FIOCRUZ, (Rio de Janeiro-RJ). From the 37 strains, identified the species Escherichia coli, Enterobacter cloacae, Enterobacter gergoviae, Enterobacter aerogenes, Klebsiella pneumoniae, Citrobater freundii, Providencia rettigeri and Serratia marcescens. The informally marketed milk is contaminated by Enterobacteriaceae that can be pathogenic and should be taken preventive measures, such as pasteurization of milk.

This study aimed to evaluate the microbiological quality of butter cheese sold in the open market of Bom Jesus - PI, by counting of mesophilic aerobic (MA) bacteria and enumeration of total and thermophilic coliforms. Twenty-three samples were purchased and sent to the microbiology laboratory of the Food / Campus oh the Bom Jesus - UFPI. For MA count inoculated aliquots of decimal dilutions Plate Count Agar for incubation at 36°C/48h. The colimetric assays followed the technique of multiple tubes VBBL broth and broth Escherichia coli, and incubated at 35°C - 44,5°/48h, respectively. MA counts ranged from 1.0 x102 to 1.3 x 105 CFU/g. Only one sample (4.35%) was positive for total coliforms. The butter cheese sold in the open market of Bom Jesus-PI is manipulated under deficient hygienic conditions. Corrective measures should be taken to reduce the contamination of the product.

The milk has an excellent nutritional value, but under poor hygienic conditions can be a disseminator of pathogens such as Staphylococcus aureus. This study aimed to quantify S. aureus in informally marketed milk in Bom Jesus, Piaui. Were acquired 25 samples at different points of sale, which were sent to the Food Microbiology Laboratory of UFPI in Bom Jesus-PI. Aliquots (1mL) were inoculated from 10-1 to 10-3 dilutions in Petrifilm ™ Staph Express plates (3M Brazil Ltda.). The violet red colonies were subjected to application of Petrifilm Staph Express Disks for confirmation. They observed colonies of Staphylococcus aureus in all samples. The average score was 4.8 x 105 CFU / mL. It is concluded that the informally marketed milk has microbial contamination and consumption in raw form is risk to public health, the possible transmission of pathogens, requiring the adoption of corrective measures.
