The aim of the present study was to evaluate the use of pigeon pea (Cajanus cajan) as an appropriate substrate in the production of a legume-based fermented product with Lactobacillus acidophilus ATCC 314 or Lactobacillus casei ATCC 393 and then to ascertain the effects of the addition of ingredients such as powdered milk and banana or strawberry sauce. The products were analyzed for viable cell counts, pH, and sensory attributes during product manufacture and throughout the refrigerated storage period at 3, 7, 14, 21, and 28 days. Nine types of products were produced. At the end of the storage period, the viability of L. acidophilus was above 7 log CFU/g in the presence of milk and 20% sucrose fruit sauce. For products with L. casei, the lack of ingredients such as milk caused no significant loss in viability; however, a high concentration of sucrose in the fruit sauce was an important factor in maintaining a high L. casei population. L. casei had high viability and good sensory attributes. Both strains could be considered suitable for a pigeon pea-based fermented potential probiotic product and a low-cost protein source.

The purpose of this study was to investigate the survival of Lactobacillus reuteri ATCC 55730 in creams, prepared with pigeon peas and oat. Products were analysed to determine their content of protein, fibre, fat, carbohydrates and degree of likeness. Viable numbers of L. reuteri and pH were determined after 1, 7, 14, 21 and 28 days of storage at 4°C. Results showed significant differences (P < 0.05) in protein, fat, fibre and carbohydrate content between creams. No significant differences (P > 0.05) were found on sensory quality between control and creams with L. reuteri. After 28 days, the cell viability was above 7 log cfu/g in all creams. L. reuteri ATCC 55730 had the highest viability in cream with 40% pigeon pea and 20% oat (8.16 log cfu/g). In conclusion, due to its acceptability and highly nutritious value, the product could be used so as to support the growth of L. reuteri.

This study evaluated the effect of adding oat fibre source of ß-glucan (13.45%) on physical, chemical, microbiological and sensory traits of low-fat (<10%) beef patties as compared to 20% fat control patties. Significant (p<0.05) improvements in cooking yield (74.19%), and retentions of fat (79.74%) and moisture (48.41%) of low-fat patties were attributed to the water binding ability of ß-glucan. Because of larger water retentions moisture contents of raw and cooked low-fat patties were higher (p<0.05) than those of the control patties. Cholesterol content was similar across formulations. Low-fat and control beef patties remained stable in microbiological quality during 60days frozen storage. Low-fat patties were found to be of lower degree of likeness in the taste but juicer than control (p<0.05). Besides appearance, tenderness and colour were not affected by the addition of oat's soluble fibre. Oat fibre can be used successfully as a fat substitute in low-fat beef patties.

Las enfermedades diarreicas constituyen un problema de salud pública a nivel mundial, especialmente en los países en vías de desarrollo, como Venezuela donde representan unas causa importante de morbilidad y mortalidad infantil. Entre los principales agentes etiológicos bacterianos de esta entidad nosológica se encuentra el género aeromonas, sin embargo, el significado clínico de su aislamiento no se ha establecido definitivamente. El propósito de esta investigación es detectar fenoespecies bacterianas del género aeromonas en muestra de heces de niños aparentemente sanos, con la finalidad de esclarecer la existencia de portadores asintómaticos en nuestro medio y contribuir a dilucidar la importancia clínica de su aislamiento en pacientes con gastroenteritis. La investigación se llevó a cabo durante el período comprendido entre septiembre y diciembre de 1999; se colectaron y analizaron 122 muestras de heces de niños de ambos sexos, con edades comprendidas entre 3 y 6 años, registrados en 16 preescolares privados de la parroquia Chiquiquirá del Municipio Maracaibo. El análisis de las muestras para la detección de fenoespecies del género aeromonas se llevó a cabo empleando la metodología diagnóstica convencional, basada en pruebas bioquímicas. En las muestras analizadas se detectó 27,87 por ciento (34/122) de positividad a especies de aeromonas. Aeromonas caviae resultó la especie más prevalente (52,78 por ciento), seguida de A. jandaei (19,44 por ciento), A. veronii biovar sobria (13,89 por ciento), A. hydrophila (11,11 por ciento) y A. trota (2,78 por ciento). En la mayoría de los casos (94.1 por ciento) se aisló una sola especie por muestra. La distribución de los aislamientos por edad y sexo no resultó estadísticamente significativa (p>0.05). Los resultados obtenidos demuestran la existencia de un número considerable de portadores asintomáticos de aeromonas entre los niños estudiados, por lo que resulta imprescindible realizar mayores investigaciones que contribuyan a establecer el significado de su aislamiento en pacientes con diarrea

To evaluate the quality of life, and to establish local reference standards, the nutritional and metabolic status were assessed in two-hundred-eleven non-institutionalized adults divided in two groups: the experimental (> or = 60 years old), and the control (< 60 years old). The anthropometric nutritional status was assessed with the Quetelet Index with no significant differences between the age groups. The 24-hour recall method in the dietetic evaluation showed a high lipid and protein diet, which is characteristic of the region. The diet is deficient in energy, carbohydrates, fiber, copper, and zinc. Biochemical determinations of zinc, copper, total protein, albumin, alkaline phosphatase, triglyceride, total cholesterol, HDL-cholesterol, LDL-cholesterol, glucose, and insulin, were performed on 12-hours fasting subjects without significant (p < 0.05) age-based differences, except albumin levels, which reflects overall protein status. On the other hand, albumin, trygliceride, total cholesterol, HDL-cholesterol, LDL-cholesterol, and copper levels showed sex-based and age-sex-based significant differences (p < 0.05). Similar studies should be made on institutionalized or free-living individuals, from different socioeconomic levels and a nutritional status assessed by anthropometric measures, body composition, and food intake.
