A study was conducted to evaluate the effect of an emulsifier on reduced-energy diets using two fat sources for broilers. The study was designed as a 2 x 3 factorial arrangement of treatments. The first factor was 2 fat sources (poultry fat or beef tallow). The second factor was a basal diet with the recommended energy levels, a diet with a 0.83 MJ/kg of energy reduction, and a diet with an energy reduction and inclusion of 1 g emulsifier/kg of diet. The emulsifier used in this study was composed of soy lecithin and polyethylene glycol ricinoleate. The emulsifier increased apparent metabolizable energy (AME) and apparent metabolizable energy corrected for nitrogen balance (AMEn) in beef tallow diets compared to energy-reduced diets (P<0.001). Broilers fed poultry fat had higher weights and weight gains at 35 and 42 d of age (p=0.001), and they had higher daily deposition of fat in the carcass (P = 0.025) when compared to diets with beef tallow. The inclusion of emulsifiers in broiler diets improves AME and AMEn but did not affect the energy reduction diets, which resulted in reduced performance, decreasing daily fat deposition, but without effects on serum lipid profile in broilers.(AU)


Um estudo foi conduzido para avaliar o efeito de um emulsificante em dietas com baixo teor de energia usando duas fontes de gordura para frangos de corte. O estudo foi delineado em arranjo fatorial 2 x 3 de tratamentos, o primeiro fator foi 2 fontes de gordura (gordura de frango ou sebo bovino) e o segundo fator uma dieta basal com os níveis de energia recomendados, uma dieta com 0,83 MJ / kg de redução de energia e uma dieta com redução de energia e inclusão de 1 g de emulsionante / kg de dieta (composto de lecitina de soja e ricinoleato de polietilenoglicol). O emulsificante aumentou a energia metabolizável aparente (EMA) e a energia metabolizável aparente corrigida para o balanço de nitrogênio (EMAn) em dietas com sebo bovino em comparação com dietas com redução de energia (P <0,001). Frangos de corte alimentados com gordura de frango apresentam maiores pesos e ganhos de peso aos 35 e 42 dias de idade (p=0,001), e maior deposição diária de gordura na carcaça (P=0,025) quando comparados às dietas com sebo bovino. O emulsificante incluído nas dietas de frangos de corte melhora a EMA e EMAn, mas não supre a redução energética, causando efeitos negativos no desempenho, diminuindo a deposição diária de gordura, mas sem efeitos no perfil lipídico sérico em frangos de corte.(AU)

This article presents the results of the level of feeding and the health status of dairy cows in a commercial dairy farm on the content of the main components in milk (fat, protein, urea). The aim of the research was to study the milk productivity and composition of milk of cows, to analyze the level of feeding and the content of basic nutrients in the diet of the farm. The farm breeds purebred Holstein cattle with a high genetic potential for productivity. The milking herd was formed in 2009 on the basis of 600 heads of Holstein-Friesian heifers imported from Hungary, as well as 65 heads of Holsteinized heifers of Ukrainian selection from Ukraine in 2015. Today the livestock numbers about 1,500 head of cattle, of which there are about 900 breeders. On the territory of the farm there are: 3 cowsheds for keeping cows, an insemination room, a milking parlor with a parallel installation of the Delaval company, in which 48 cows are milked for one milking, the ABK, where the manager’s office, livestock technician, accounting is located, and a mini-hotel with dining room and lounges. Dairy bases are equipped with auto-drinkers, ventilation, plumbing, electric lighting, manure removal mechanisms, and a milking installation. The object of the research was Holstein cows in the amount of 483 heads of Aina Dairy Farm LLP. The studies were carried out according to generally accepted zootechnical methods using modern equipment for conducting analyzes and interstate and state standards. The research results showed that the milk productivity of cows averaged 19.5 kg per day, the fat content 4.3%, the protein 3.9%, the number of somatic cells 230.5 thousand units / ml, urea 45.3 mg / 100 ml respectively. Este artigo apresenta os resultados do nível de alimentação e do estado de saúde de vacas leiteiras em uma fazenda comercial leiteira sobre o conteúdo dos principais componentes do leite (gordura, proteína, ureia). O objetivo da pesquisa foi estudar a produtividade e composição do leite de vacas, analisar o nível de alimentação e o teor de nutrientes básicos na dieta da fazenda. A fazenda produz gado holandês de raça pura com alto potencial genético de produtividade. O rebanho leiteiro foi formado em 2009 com base em 600 cabeças de novilhas Holstein-Friesian importadas da Hungria, bem como 65 cabeças de novilhas holsteinizadas da seleção ucraniana em 2015. Hoje o gado totaliza cerca de 1.500 cabeças de gado, das quais existem cerca de 900 criadores. No território da fazenda existem: 3 estábulos para criação de vacas, uma sala de inseminação, uma sala de ordenha com instalação paralela da empresa Delaval, na qual são ordenhadas 48 vacas para cada ordenha, a ABK, onde fica o escritório do gestor, pecuária técnica, a contabilidade está localizada, e um mini-hotel com refeitório e salões. As bases leiteiras são equipadas com bebedouros automáticos, ventilação, encanamento, iluminação elétrica, mecanismo de remoção de esterco e instalação de ordenha. O objeto da pesquisa foram vacas da raça holandesa no valor de 483 cabeças da Aina Dairy Farm LLP. Os estudos foram realizados de acordo com métodos zootécnicos geralmente aceitos, utilizando equipamentos modernos para a realização de análises e padrões interestaduais e estaduais. Our objective was to evaluate the genetic merit of Holstein cattle population in southern Brazil in response to variations in the regional temperature by analyzing the genotype by environment interaction using reaction norms. Fat yield (FY) and protein yield (PY) data of 67 360 primiparous cows were obtained from the database of the Paraná Holstein Breeders Association, Brazil (APCBRH). The regional average annual temperature was used as the environmental variable. A random regression model was adopted applying mixed models with Restricted Maximum Likelihood (REML) algorithm using WOMBAT software. The genetic merit of the 15 most representative bulls, depending on the temperature gradient, was evaluated. Heritability ranged from 0.21 to 0.27 for FY and from 0.14 to 0.20 for PY. The genetic correlation observed among the environmental gradients proved to be higher than 0.80 for both traits. Slight reranking of bulls for both traits was detected, demonstrating that non-relevant genotype by environment interaction for FY and PY were observed. Consequently, no inclusion of the temperature effect in the model of genetic evaluation in southern Brazilian Holstein breed is required.

Fat sources are important component on animal feed. However, ruminants did not evolve to efficient degrade lipids. Thus, it is necessary to study how its supplementation may affect animal performance. The objective of this study was to evaluate the use of different lipids sources over consumption, performance, metabolites, and feed behavior of pregnant sheep. The experiment was carried out at Capim Branco Experimental Farm, at goat and sheep sector of Federal University of Uberlândia, from August to November 2015. Twenty-four pregnant sheep were used, mean body weight 50 kg and approximate 12 months age. The animals were divided into three treatments (Control, palm oil protected fat and cottonseed). The corn silage was used as the bulk. The roughage: concentrate ratio was 60:40 (on dry matter). Measurements of body weight, body condition score and biometric measurements were taken every 21 days. Ingestive behavior evaluation was performed throughout the experiment. The consumption measurement was made in descriptive way. Shortly after birth, the sheep and their offspring were weighed, the barrel circumference was taken, and samples from the mother's blood were collected. The experimental design was completely randomized with repeated measurements in time. It was verified greater time spent with feeding and chewing in the treatment with cottonseed and consequently less time in idle. There was no statistical difference in weight, barrel circumference (BC) and body condition score (BCS) of the sheep under the different treatments. There was a linear growth in BC measurements and sheep weight over the evaluated periods. There were differences between the treatments for the offspring's average weight. The use of cottonseed as a fat source increases the birth weight of the progeny and improves pregnant sheep metabolic profile in relation to inert fat.

RESUMEN Se estableció la caracterización de salchichas secas tipo cabanossi con carne de llama, cerdo y muestras comerciales mediante un análisis proximal (contenidos de grasa: 18,6 a 29,6% y proteína: 19,4 a 36,2%), color (C*: 15,8 a 33,7), actividad de agua (0,770 a 0,960), pH (5,2 a 6,5) y propiedades mecánicas como dureza (47,8 a 124 N) y masticabilidad (9,4 a 33,2 N). Se obtuvieron 19 descriptores a partir de la opinión de 83 consumidores; luego, se empleó el método CATA (Check-all-that-apply) para describir las características sensoriales del cabanossi empleando 55 consumidores. Se evidenció que el cabanossi con carne de llama presentó el menor contenido de grasa total y ácidos grasos saturados, y mayor contenido de ácidos grasos poliinsaturados en comparación a las otras muestras. Los descriptores más utilizados fueron: olor característico/embutido, sabor a especias/condimentos, picante y sensación residual picante. Los consumidores indicaron como atributos relevantes para la aceptabilidad al color rojo claro, blando/suave, masticable y picante. La utilización de carne de llama constituye una alternativa en el desarrollo de nuevos productos cárnicos basados sobre las características presentadas.


ABSTRACT The chemical and physical characterization of cabanossi-type dry sausages made with lama meat, pork and commercial samples were performed. Remarkable differences were found in terms of fat (18.6 to 29.6%), color (15.8 to 33.7), water activity (0.770 to 0.960), pH (5.6 to 6.5), hardness (47.8 to 124 N) and chewiness (9.4 to 33.2 N). Nineteen descriptive terms based on the opinions of 83 consumers were used. Then, 55 consumers used the CATA (Check-all-that-apply) method to describe the sensory traits of cabanossi . Sausage from lama meat had the lowest total fat and saturated fatty acid content, and the highest polyunsaturated fatty acid content in comparison to the other samples. The most utilized sensory terms were: characteristic odor/smell of sausage, spicy flavor and spicy after taste. For sensory acceptability, consumers selected light red color, soft/tender, chewable and spicy as the most relevant traits. The application of lama meat represents an alternative to new meat products developed based on the characteristics studied.

BACKGROUND: Numerous non-meat ingredients, such as hydrocolloids, starches, and fibers, have been studied to improve texture characteristics and increase the ability to bind water in low-fat meat products. In this sense, pulses flours (lentil, chickpea, pea, and bean) were studied at two levels and various water:flour ratios to replace 10-44% pork meat in low-fat burgers and determine the effect on their sensory and technological properties (cooking yield, expressible liquid, diameter reduction, and color and texture profile). RESULTS: All pork-meat burgers that included pulse flour showed higher cooking yields, lower diameter reductions, and expressible liquids than all-meat burgers, which displayed better oil and water retention. Higher water additions resulted in burgers with less hardness. Burgers with 80 g kg-1 lentil flour in all water/flour ratios presented the lowest total color difference (ΔE) compared with the commercial control. Burgers with the higher level of all pulse flour tested and medium water levels showed acceptable sensory scores. CONCLUSIONS: Partial pork meat replacement by different legume flour (lentil, chickpea, pea, and bean), at levels of 80 and 150 g kg-1 and water/flour ratios of 1250, 1600, and 2000 g kg-1 resulted in low-fat burgers with adequate physicochemical characteristics. Moreover, the sensorial evaluation of the formulations with the maximum flour addition and intermediate water/flour ratio showed that they had good sensorial acceptability with no effect of flour type. © 2020 Society of Chemical Industry.

The potential use of babassu (Orbignya phalerata Mart.) in several activities is large. In view of these facts, this study aimed to determine the physicochemical composition of the babassu almond (OpAM) and evaluate the chemical, physical and physicochemical aspects of babassu coconut oil isolated by different methods of extraction. Babassu nut oil was removed by extraction with a hot solvent (Soxhlet) (OpS), hydraulic pressure (OpHP) and cold extraction (Blight and Dyer) (OpBD). Two artisanal samples from the states of Pará (OpP) and Maranhão (OPM) were also tested. OpAM presented 2% protein, 49.5% fat, 42.4% carbohydrates and water activity of 0.670. No statistical differences were found between the babassu coconut extraction techniques which presents saturated fatty acids as major oil fatty acids, especially lauric (41.6%), myristic (14.6%) and unsaturated oleic (15.7%). No samples tested positive in the thiobarbituric acid reactive substances test, and they also showed low levels of acidity. Babassu coconut oil showed good oxidative stability with a high induction period. The samples tended to green and yellow colors, and the babassu oil extracted by Soxhlet was less viscous than the others.


El uso potencial de babassu (Orbignya phalerata Mart.), en varias actividades es amplio. En vista de esto, este estudio tuvo como objetivo determinar la composición fisicoquímica de la almendra de babassu (OpAM) y evaluar los aspectos químicos, físicos y físicoquímicos del aceite de coco de babassu aislado mediante diferentes métodos de extracción. El aceite de coco de babasú se aisló mediante extracción con un disolvente caliente (Soxhlet) (OpS), mediante presión hidráulica (OpHP) y utilizando un disolvente frío (Blight and Dyer) (OpBD). También se analizaron dos muestras artesanales de los estados de Pará (OpP) y Maranhão (OPM). OpAM presentó 2% de proteína, 49,5% de grasa, 42,4% de carbohidratos y una actividad de agua de 0,670. No se encontraron diferencias estadísticas entre las técnicas de extracción de babassu de coco que presentan ácidos grasos saturados como los principales ácidos grasos oleosos, especialmente láurico (41,6%), mirístico (14,6%) y oleico insaturado (15,7%). Ninguna muestra resultó positiva en la prueba de sustancias reactivas al ácido tiobarbitúrico, y también mostraron niveles bajos de acidez. El aceite de coco Babassu mostró una buena estabilidad oxidativa con un alto período de inducción. Las muestras tendían a los colores verde y amarillo, y el aceite de babassu extraído por Soxhlet era menos viscoso que los otros.

This research communication addresses the hypothesis that in dual-purpose goats, exposure to 1 h of extra-light given from 16 to 17 h after dawn (pulse of light) in winter stimulates milk yield. One group of goats was maintained under natural short photoperiod (natural day; ND (n = 7)). Another group of lactating females was submitted to an artificial long-day photoperiod consisting of 16 h light and 8 h darkness (long days; LD (n = 7)). A third group of females received one single hour of extra-light 16 h after the fixed dawn (pulse of light; PL (n = 6)). Goats from LD and PL yielded 30% more milk than goats from ND. Mean percentages of fat, protein and lactose contents in milk did not differ between the 3 groups at any stage of lactation, but these components in grams/day were higher in goats from PL than in the others two groups within the first 45 d of lactation. In conclusion, dual-purpose lactating goats that started their lactation during natural short days, the daily exposition to a 1-h pulse of light is sufficient to stimulate milk yield compared to females maintained under natural short photoperiod.
