Antioxidants are considered functional additives against oxidative stress since they avoid nutritional decline in the meat. The main objective of the present study is to evaluate the effect of sweet potato flour (SPF) as a natural antioxidant on carcass yield and physicochemical characteristics of Creole chickens of Mexico (CChM) and Cobb 500 broilers. In total, 210 chickens (105 CChM and 105 Cobb 500 chickens) were randomly assigned to three treatments: 0, 500, and 1000 mg of SPF kg-1 of feed. The Cobb 500 chickens showed higher carcass yield (hot and cold), breast, and breast fillet, whereas the CChM had higher thigh yield (P ≤ 0.05). The yield on the previously mentioned variables was not affected by the inclusion levels of SPF. The initial pH differed because of the effect of the chicken's genotype and the addition of SPF, which was higher on Cobb 500 chicken and on those that were not supplemented with SPF. The birds' skin that consumed SPF presented higher yellowness after 24 h (P ≤ 0.05). CChM manifested a higher dry matter and protein content and a lower content of ash and fat (P ≤ 0.05). In conclusion, Cobb 500 chickens present a higher carcass yield and its components, in addition to a less acid pH; however, CChM offer a higher nutritional contribution, whereas the 500 and 1000 mg addition of SPF increases the skin yellowness, which makes it an alterorganic as a pigment on broiler chicken production.

Ipomoea batatas has an enormous projection as functional food and it is an excellent source of anticancerous or chemopreventive substances. Plant tissue culture offers the possibility of inducing secondary metabolites production under controlled conditions and their projection for industrial purposes. To establish the state of knowledge regarding advances in polyphenols chemical elicitation from I. batatas and the possibility of producing potential anticancerous compounds in vitro culture systems, a bibliometric review and an analysis of information available until 2020 were made. Results showed that research field on which review was carried out is current and has a growing trend; however, sweet potato cell suspensions evaluation is scarce. Elicitation using compounds with hormonal effects represents a good alternative to increase phenolic acids production in this species. Advances in phenols elicitation from sweet potato cell suspensions will require search superior genotypes, and associating this knowledge with in vivoand in silico studies.


Ipomoea batatas tiene una enorme proyección como alimento funcional y es una excelente fuente de sustancias anticancerosas o quimiopreventivas. El cultivo de tejidos vegetales ofrece la posibilidad de inducir la producción de metabolitos secundarios en condiciones controladas y su proyección con fines industriales. Para establecer el estado del conocimiento sobre los avances en la elicitación química de polifenoles en I. batatas y la posibilidad de producir compuestos potencialmente anticancerosos en sistemas de cultivo in vitro, se realizó una revisión bibliométrica y un análisis de la información disponible hasta 2020. Los resultados mostraron que el campo de investigación en el que se realizó la revisión es actual y tiene una tendencia creciente; sin embargo, la evaluación de las suspensiones celulares de batata es escasa. La elicitación usando compuestos con efectos hormonales representa una buena alternativa para incrementar la producción de ácidos fenólicos en esta especie. Los avances en la obtención de fenoles a partir de suspensiones celulares de batata requerirán la búsqueda de genotipos superiores y la asociación de este conocimiento con estudios in vivo e in silico.

This research determined the nutritional composition, antioxidant activity and total phenolic compound content of sweet potato flour from different cultivars: Beauregard cv. sweet potato (BF) and the common sweet potato Brazlândia Rosada cv. (CF). Total lipids, proteins, moisture, carbohydrates, pH, titratable acidity, fiber, ash, iron, zinc, beta-carotene, vitamin A and determination of caloric value were analyzed. Antioxidant activity and total phenolic compounds were also determined by the DPPH (2,2-diphenyl-1-picryl-hydrazyl), ABTS (2,2-azinobis (3-ethylbenzothiazoline-6-sulfonic acid) and FRAP (Ferric Reducing Antioxidant Power) methods. CF showed higher levels of carbohydrates, ash, fiber, pH and antioxidant activity by the ABTS method. Protein and zinc contents were similar between the two flours. BF had higher moisture content, caloric value, lipids, iron, DPPH radical scavenging capacity and antioxidant activity by the FRAP method, as well as total phenolic compounds, beta-carotene and vitamin A content. The data revealed good nutritional composition for both analyzed flours. The Beauregard flour can be highlightedregarding its higher beta-carotene and iron content. Moreover, the Beauregard sweet potato flour is a good source of provitamin A, in addition to being a source of fiber.


O objetivo deste trabalho foi determinar a composição nutricional, atividade antioxidante e teor de compostos fenólicos totais de farinhas de batata-doce de diferentes cultivares: batata-doce Beauregard (FB) e batata-doce comum, cv. Brazlândia Rosada (FC). Foram realizadas as análises de lipídeos, proteínas, umidade, carboidratos, pH, acidez titulável, fibras, cinzas, ferro, zinco, betacaroteno, vitamina A e determinação do valor calórico. Também foram determinadas a atividade antioxidante, pelos métodos DPPH (2,2-difenil-1-picril-hidrazil), ABTS (2,2-azinobis (3-etilbenzotiazolina-6-ácido sulfônico) e FRAP (Ferric Reducing Antioxidant Power), e compostos fenólicos totais. A FC apresentou maiores teores de carboidratos, cinzas, fibras, pH e atividade antioxidante pelo método ABTS. Os teores de proteínas e zinco foram semelhantes entre as duas farinhas. A FB apresentou maiores teores de umidade, valor calórico, lipídeos, ferro, capacidade sequestradora de radicais DPPH e atividade antioxidante pelo método FRAP, compostos fenólicos totais, conteúdo de betacaroteno e vitamina A. Os dados revelaram uma boa composição nutricional para ambas as farinhas analisadas. O destaque para a farinha da batata-doce Beauregard é maior em relação ao seu teor de betacaroteno e ferro. Sendo a farinha obtida pela batata-doce Beauregard uma boa fonte de pró-vitamina A, além de ser fonte de fibras.

The anthocyanins are pigments responsible for a wide range of colours in plants, from blue, red and purple, play essential biological roles as well as their genes are evolutionarily conserved. Purple sweet potatoes have anthocyanins as the predominant colour, even though they are present in orange roots masked by carotenoids. Several studies have focused on molecular aspects of anthocyanin genes, mainly in wild Ipomoea species, although the structure and segregation analysis of those genes in sweet potato hexaploid species are still unknown. Based on an "exon-primed intron-crossing" (EPIC) approach, fourteen pairs of primers were designed, on five structural anthocyanin genes as candidates. The strategy exploits the Intron Length Polymorphism (ILP) from Candidate Genes (CG), resulting in 93% of successful markers giving scorable and reproducible alleles. The results allowed to define partial structure and sequence of the introns and exons from the selected CG, and to determine patterns of sequence variation. The evaluation of marker dosage and allelic segregations in an Ipomoea batatas (L.) Lam mapping population identified several alleles for linkage analysis. The study validated the utility of ILP-CG markers for genetic diversity and conservation applicability and a successful amplification gradient across wild Ipomoea species validated their transferability.

The effects of microwave alone (MA) and microwave-assisted L-malic acid (MLA) on the physicochemical properties, structural and digestibility of sweet potato starch were investigated. The results showed that the swelling power, lightness (L⁎) and whiteness index (WI), gelatinization enthalpy of starch decreased by MA and MLA treatment. The starch treated by MLA showed a new characteristic absorption peak at near 1735 cm-1 in the measurement of FT-IR, while the starch treated with MA showed no new characteristic peak. The relative crystallinity of starch modified by MSE and MA decreased, but it still retained A-type crystal structure. Scanning electron microscopy showed that the surface destruction of MSE-modified starch was greater than that of starch modified by MA. MLA increased the content of resistant starch (RS), while MA reduced the content of resistant starch (RS). The relative crystallinity and gelatinization enthalpy of continuous 60 s treatment were lower than those of discontinuous 60 s treatment. These results indicated that MLA had a greater effect on the physicochemical properties, structural and digestibility of starch than MA. Starch modified by MLA can be added to foods as a low-carbohydrate ingredient, and the starch treated by MA is suitable for foods with low swelling, such as noodles.

The preservation of Andean roots and tubers (ART) depends on the recognition of their health-promoting and nutritional metabolites and their transformation into other products such as starches. The objective of this study was to determine the physicochemical and structural properties of native starches obtained from Canna edulis K., Oxalis tuberosa M., and Ipomoea batatas L. from the Colombian Andean agroecosystem. The physicochemical properties of starches were determined by traditional methods of analysis. The thermal properties were determined by gravimetric thermal analysis (TGA) and differential scanning calorimetry (DSC), while the structural characteristics were studied with X-ray diffractometry and infrared spectrometry. The ART showed a starch yield of between 53.3% and 75.4% (dry basis) and amylose content between 28.4% and 35.6%. Starches from I. batatas showed the highest percentage of amylose, lowest gel clarity, lowest water absorption index, and highest gel temperature. X-ray diffractograms showed a type A crystallographic pattern for I. batatas starch, and a type B pattern for C. edulis and O. tuberosa starches, while infrared spectra (FTIR-ATR) corroborated the structural characteristics of each type of starch. The results suggest that starches from Andean resources can be used as a substitute for traditional starches from corn and potato. In addition, their amylose content makes them potential sources of resistant starch and dietary fiber.

Purple-fleshed sweet potatoes are rich in phenolic compounds, such as anthocyanins, and also exhibit hypoglycemic properties. Anthocyanins are natural antioxidants with the capacity to inhibit or delay injuries caused by free radicals. Drying is one of the most commonly used vegetable preservation methods; although,it has parameters that affect the sensory and physicochemical properties of the final product. The present study assessed the impact of drying temperatures (40, 50, and 60 °C) on the purple-fleshed sweet potato. Cut, unpeeled potato slices of 4 cm in diameter and 3 mm in thickness were dried in an oven with hot air circulation. The effect of the different temperatures on the antioxidant capacity, phenolic compound content, and total and monomeric quantities of anthocyanins in purple sweet potato were measured, and a mathematical model describing the drying kinetics was determined. According to the results observed, the process at 40 °C better preserved the phenolic compounds; however, drying at 50 °C was more efficient for conserving the antioxidant capacity measured by the H + capture method performed by DDPH, and for the total and monomeric quantities of anthocyanins. The mathematical models that best described the kinetic curves were those of Henderson and Pabis, and Page.


A batata doce roxa de polpa roxa é rica em compostos fenólicos, como as antocianinas além de possuir também propriedades hipoglicêmicas. As antocianinas são antioxidantes naturais capazes de inibir ou retardar lesões causadas por radicais livres. Um dos métodos de conservação de vegetais mais utilizados é a secagem. Mesmo sendo um método de execução simples, possui parâmetros de processo que interferem amplamente em termos sensoriais e nas propriedades físico-químicas do produto final. O presente trabalho teve por objetivo avaliar o impacto de três temperaturas de secagem (40, 50 e 60 °C), em rodelas de batata doce roxa de polpa roxa com casca, com diâmetro de 4cm e espessura de 3mm, em desidratador com circulação de ar quente sobre a capacidade antioxidante, teor de compostos fenólicos, antocianinas totais e monoméricas, além de determinar um modelo matemático que pudesse descrever as cinéticas de secagem. De acordo com os resultados obtidos a secagem a 40 °C se mostrou mais conveniente em termos de compostos fenólicos, porém a secagem a 50 °C se mostrou mais eficiente para o resultado de capacidade antioxidante pelo método de captura de H+ realizado por DPPH e para antocianinas totais e monoméricas. Os modelos matemáticos que descreveram melhor as curvas de cinética foram o modelos de Henderson e Pabis e o de Page.

Owing to their antioxidant properties, caffeoylquinic acid (CQA)-derivatives could potentially improve the impaired metabolism in hepatic cells, however, their effect on mitochondrial function has not been demonstrated yet. Here, we evaluated the impact of three CQA-derivatives extracted from purple sweet potato, namely 5-CQA, 3,4- and 4,5-diCQA, on mitochondrial activity in primary hepatocytes using an extracellular flux analyzer. Notably, an increase of maximal respiration and spare respiratory capacity were observed when 5-CQA and 3,4-diCQA were added to the system indicating the improved mitochondrial function. Moreover, 3,4-diCQA was shown to considerably increase glycolytic reserve which is a measure of cell capability to respond to an energy demand through glycolysis. Conversely, 4,5-diCQA did not modify mitochondrial activity but increased glycolysis at low concentration in primary hepatocytes. All compounds tested improved cellular capacity to oxidize fatty acids. Overall, our results demonstrated the potential of test CQA-derivatives to modify mitochondrial function in hepatic cells. It is especially relevant in case of dysfunctional mitochondria in hepatocytes linked to hepatic steatosis during obesity, diabetes, and metabolic syndrome.

BACKGROUND: Sweet-potato breeding programs need to integrate sensory characterization and hedonic perception to provide global markets with widely accepted products. The present work aimed to characterize a series of purple-skin sweet potatoes differing in flesh coloration (from pale yellow to slight orange) from a sensory and physicochemical perspective. Uruguayan consumers' perceptions of the genotypes were also explored. Special focus was placed on the influence of flesh color on consumers' expectations and hedonic perception of purple-skin sweet potatoes. RESULTS: Sensory characterization based on projective mapping showed that the evaluated genotypes largely differed in their sensory characteristics in terms of flavor, texture, and color. Soluble solids and the concentration of individual sugars were not good predictors of sensory quality. In the appearance evaluation, consumers associated orange flesh with positive expected sensory characteristics and stronger liking. Flavor (sweetness and typical flavor) and texture (creaminess) were identified as key characteristics influencing consumers' liking and description of sweet-potato samples. Among purple-skin ('criollo or boniato' type) genotypes, INIA Cambará was identified as the closest to the ideal sweet potato and was described with the terms sweet, tasty, creamy, and characteristic flavor. CONCLUSION: Flesh color was identified as a key driver of consumers' sensory and hedonic expectations. Results showed that Uruguayan consumers positively value traditional purple-skin sweet potatoes with orange flesh, as it drives positive sensory expectations. However, after tasting, flesh color does not seem to have a relevant influence on consumer liking.

BACKGROUND: Sweetpotato and potato are fast-maturing staple crops and widely consumed in low- and middle-income countries. Conventional breeding to biofortify these crops with iron could improve iron intakes. To our knowledge, iron absorption from sweetpotato and potato has not been assessed. OBJECTIVE: The aim was to assess iron absorption from regular and iron-biofortified orange-fleshed sweetpotato in Malawi and yellow-fleshed potato and iron-biofortified purple-fleshed potato in Peru. METHODS: We conducted 2 randomized, multiple-meal studies in generally healthy, iron-depleted women of reproductive age. Malawian women (n = 24) received 400 g regular or biofortified sweetpotato test meals and Peruvian women (n = 35) received 500 g regular or biofortified potato test meals. Women consumed the meals at breakfast for 2 wk and were then crossed over to the other variety. We labeled the test meals with 57Fe or 58Fe and measured cumulative erythrocyte incorporation of the labels 14 d after completion of each test-meal sequence to calculate iron absorption. Iron absorption was compared by paired-sample t tests. RESULTS: The regular and biofortified orange-fleshed sweetpotato test meals contained 0.55 and 0.97 mg Fe/100 g. Geometric mean (95% CI) fractional iron absorption (FIA) was 5.82% (3.79%, 8.95%) and 6.02% (4.51%, 8.05%), respectively (P = 0.81), resulting in 1.9-fold higher total iron absorption (TIA) from biofortified sweetpotato (P < 0.001). The regular and biofortified potato test meals contained 0.33 and 0.69 mg Fe/100 g. FIA was 28.4% (23.5%, 34.2%) from the regular yellow-fleshed and 13.3% (10.6%, 16.6%) from the biofortified purple-fleshed potato meals, respectively (P < 0.001), resulting in no significant difference in TIA (P = 0.88). CONCLUSIONS: FIA from regular yellow-fleshed potato was remarkably high, at 28%. Iron absorbed from both potato test meals covered 33% of the daily absorbed iron requirement for women of reproductive age, while the biofortified orange-fleshed sweetpotato test meal covered 18% of this requirement. High polyphenol concentrations were likely the major inhibitors of iron absorption. These trials were registered at www.clinicaltrials.gov as NCT03840031 (Malawi) and NCT04216030 (Peru).
